Small Changes That Actually Stick

If you’ve ever tried to “eat healthy,” you’ve probably experienced what I call the Monday Diet.

You throw out everything in your pantry.

Buy kale.

Meal prep enough grilled chicken to feed a small village.

Promise yourself you’re never eating fast food again.

…and by Thursday you’re sitting in a drive-thru wondering where it all went wrong.

I’ve been there.

This time, I’m doing things differently.

I’m not trying to eat perfectly.

I’m trying to eat better.

Because better is sustainable.

My New Favorite Breakfast

One of the easiest changes I’ve made is my cottage cheese bowl.

Mine usually includes:

  • Cottage cheese
  • One sliced banana
  • Walnuts
  • A drizzle of honey

It’s packed with protein, healthy fats, and just enough sweetness to satisfy my morning cravings.

Best of all, it keeps me full for hours. Instead of looking for a snack halfway through the morning, I actually stay satisfied until lunch.

Sometimes the simplest meals end up becoming your favorites.

Cowboy Caviar Became My Obsession

If you’ve never had cowboy caviar, think of it as a fresh salsa, bean salad, and protein-packed lunch all rolled into one.

My version includes:

  • Black beans
  • Sweet corn
  • Bell peppers
  • Tomatoes
  • Red onion
  • Jalapeños
  • Fresh cilantro
  • Grilled chicken

What really makes this dish special, though, is the homemade dressing.

Instead of reaching for a bottled dressing, I make a simple vinaigrette using ingredients I almost always have at home:

  • Extra virgin olive oil
  • Apple cider vinegar
  • Fresh lime juice
  • Minced garlic
  • Salt
  • Black pepper
  • Chili powder
  • Ground cumin
  • A pinch of paprika

That’s it.

The olive oil adds richness while the apple cider vinegar and lime juice keep everything bright and fresh. The spices bring just enough flavor without covering up the vegetables.

One thing I’ve learned is that homemade dressings don’t have to be complicated. They taste fresh, they’re easy to make, and I know exactly what’s going into them.

Then comes my favorite part…

Instead of regular tortilla chips, I scoop it up with Quest Chili Lime Protein Chips.

The chili lime flavor pairs perfectly with the dressing, and the extra protein helps keep me full for hours.

Every bite is different.

You get the sweetness from the corn, crunch from the peppers and onions, freshness from the cilantro, a little heat from the jalapeños, heartiness from the beans, and plenty of protein from both the grilled chicken and the Quest chips.

It’s one of those meals I actually look forward to eating every week.

My New Favorite Dinner: Protein Pizza

One evening I decided to experiment.

I spread seasoned ground chicken across a tortilla and baked it until the chicken was fully cooked.

My seasoning was simple:

  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Salt
  • Black pepper

Once the chicken was cooked, I topped it with no-sugar-added pasta sauce and mozzarella cheese before putting it back in the oven.

I honestly wasn’t expecting much.

Instead…

It reminded me of chicken Parmesan.

The tortilla became crispy, the chicken stayed juicy, and the melted mozzarella pulled everything together into a dinner that tasted indulgent without feeling heavy.

I liked it so much that I ate the other half later that evening because I couldn’t stop thinking about it.

That’s when I realized something.

Healthy meals shouldn’t feel like punishment.

If you’re craving them later, you’ve probably found a recipe worth keeping.

Small Swaps Make a Big Difference

One thing I’ve learned is that healthier eating doesn’t always mean giving up your favorite foods.

Sometimes it’s simply making one better choice.

Some of my favorite swaps include:

  • Plain Greek yogurt instead of sour cream
  • Quest Protein Chips instead of traditional chips
  • Unsweetened tea instead of sugary drinks
  • Water throughout the day
  • Adding grilled chicken or black beans for extra protein
  • Choosing cottage cheese instead of fries whenever it’s available

None of these changes felt overwhelming.

But together, they’ve completely changed the way I eat.

Yes…I Still Eat Fast Food

One thing you’ll never see me do is pretend I never eat out.

Life gets busy.

Sometimes we’ve been running errands all day.

Sometimes work has been hectic.

Sometimes I just want Taco Bell.

Instead of avoiding fast food altogether, I’m learning how to order a little differently.

Taco Bell

One of my favorite meals has become:

  • Cantina Chicken Soft Tacos
  • Fiesta Potatoes with added chicken, black beans, and pico de gallo
  • Reduced-fat sour cream
  • Water or unsweetened tea

It’s satisfying, full of flavor, and still helps me reach my protein goals.

Arby’s

I’ve also found myself enjoying:

  • Honey Mustard Chicken Wraps
  • Water or unsweetened tea

Simple.

Convenient.

Balanced.

The point isn’t to avoid restaurants.

It’s learning how to make choices that fit the lifestyle I’m trying to build.

The Drinks Matter Too

One of the easiest changes I’ve made has nothing to do with food.

It’s what I drink.

Years ago, I would’ve grabbed a regular soda without thinking twice.

Now, I find myself reaching for:

  • Water
  • Unsweetened tea
  • Diet Dr Pepper
  • Coke Zero Sugar

Are diet sodas perfect?

Probably not.

But for me, they’ve been a realistic substitute for sugar-sweetened drinks while I work on building healthier habits.

One thing you’ll notice throughout this blog is that I’m not chasing perfection.

I’m chasing progress.

If choosing a Diet Dr Pepper or a Coke Zero Sugar instead of a regular soda helps me reduce added sugar and makes these changes easier to stick with, then that’s a win in my book.

Over time, I may find myself reaching for water more often—and many days I already do—but I’m also giving myself permission to make changes one step at a time instead of trying to change everything overnight.

Those small decisions, repeated over and over, are what build lasting habits.

What I’m Learning

The biggest lesson so far?

Healthy eating isn’t about perfection.

It’s about making the next good decision.

It’s about adding more vegetables, more protein, and more fiber instead of focusing on everything you “can’t” have.

It’s about finding meals that leave you feeling energized instead of sluggish.

Some days I’ll eat Taco Bell.

Some days I’ll make my protein pizza.

Some days I’ll enjoy birthday cake with my family.

And that’s okay.

This isn’t a 30-day challenge.

This isn’t another fad diet.

This is me learning how to build habits that I can realistically maintain for the rest of my life.

Because at the end of the day, I don’t want a diet that lasts a month.

I want a lifestyle that lasts for years.

One meal.

One choice.

One day at a time.
