You know those recipes that happen completely by accident?
Yeah. This is one of those.
I wanted something new to make with ground chicken for my lunches this week. The original plan was some sort of Greek-inspired chicken fritter with zucchini, feta and dill.
Except…I didn’t have dill.
No big deal.
Then I realized I didn’t have zucchini.
Okay, changing plans.
Then we got to the breadcrumbs.
Didn’t have those either.
At that point, we abandoned the original plan entirely—and somehow ended up making something I liked even better: crispy garlic Parmesan chicken fritters with a creamy, high-protein cottage cheese garlic dip.
And when I say crispy, I mean crispy. The Parmesan creates this gorgeous golden crust in the skillet while the ground chicken stays juicy inside.
I made the mistake of trying a little piece with the dip after I finished cooking them.
That was unfair.
Because these were supposed to be for tomorrow’s lunch, and now I have to wait until tomorrow to actually eat them.
Why I Love These
I’m always looking for lunches that give me plenty of protein without feeling like I’m eating the same boring “healthy” meal every day.
These check all my boxes. They’re high in protein, incredibly easy to make, meal-prep friendly, and made with ingredients I normally have around the house.
And apparently breadcrumbs are completely unnecessary because the Parmesan and egg held everything together beautifully.
The best part might actually be the sauce, though.
Instead of a mayo-heavy dipping sauce, I blended cottage cheese with garlic, lemon and Parmesan. It’s creamy, tangy, garlicky and adds even more protein to the meal.
Crispy Garlic Parmesan Chicken Fritters
Ingredients
- 1 lb ground chicken
- 1 egg
- ⅓ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning or oregano
- Small pinch of cayenne pepper
- Black pepper, to taste
- Small pinch of salt
- Olive oil, for cooking
Directions
- Add the ground chicken, egg, Parmesan and seasonings to a large bowl.
- Gently mix everything together until just combined. The mixture will be soft and a little sticky—that’s okay!
- Heat a small amount of olive oil in a skillet over medium heat.
- Scoop approximately ¼ cup of the chicken mixture directly into the skillet and gently flatten it into a small fritter.
- Let the fritter cook undisturbed for approximately 4–5 minutes. This is where the magic happens—give that Parmesan time to develop its crispy golden crust before you flip it.
- Flip and cook for another 3–5 minutes, depending on thickness.
- Continue cooking until the internal temperature reaches 165°F.
- Let the fritters rest for a couple of minutes before serving.
Important: Don’t constantly flip them! Let the first side get beautifully golden before touching them.
High-Protein Creamy Garlic Dip
Ingredients
- ½ cup cottage cheese
- ½ teaspoon garlic powder
- Squeeze of fresh lemon juice
- 1–2 tablespoons grated Parmesan
- Black pepper
- Pinch of salt
- Milk or water, only if needed for thinning
- Optional: tiny pinch of cayenne
Directions
Add everything to a blender and blend until completely smooth.
Before adding milk or water, check the consistency. The lemon juice may provide enough liquid on its own. If it’s too thick, add liquid one teaspoon at a time until it reaches a thick, creamy dipping consistency.
Taste and adjust the garlic, lemon and pepper however you like.
What I’m Serving With Them
For tomorrow’s lunch, I’m pairing the chicken fritters with the protein pasta salad I made earlier today with cucumber, broccoli, red pepper, cherry tomatoes, Colby Jack cheese and reduced-sugar Italian dressing.
So I’ve got cold, crunchy pasta salad alongside warm garlic-Parmesan chicken fritters and creamy garlic dip.
I am already looking forward to lunch.
The Accidental Recipes Are Sometimes the Best Ones
This definitely wasn’t the recipe I intended to make.
We lost the dill.
Then the zucchini.
Then the breadcrumbs.
And somehow that turned into a recipe I’m absolutely making again.
That’s pretty much how I approach eating healthier anyway. I’m not interested in perfectly curated meals with twelve specialty ingredients I’ll use once. Give me some ground chicken, vegetables, cheese and whatever happens to be in my refrigerator, and we’ll figure something out.
Sometimes it even turns out better than the original plan.
Healthy until proven complicated.
